Wow do we have a ton of eggs! The chickens are finally laying again and, even though we lost a few over the winter, we are getting way more than we can eat. See all those eggs in the picture up top? That’s after Jeff took 2 or 3 dozen to work for people.
We also got a couple of coupons from one of our local grocery stores for free eggs. And I can’t turn down free.
Now, I need to say that I hardly ate any eggs over the winter because we had to buy eggs since the chickens went on strike. I really hate store eggs. Like, a lot. So when I got these 2 coupons for a free dozen eggs, I sort of wondered what I was doing getting them. Especially since the chickens are laying again.
So what do you do with flavorless store eggs? Give them some flavor, of course!
I found a killer recipe for deviled eggs. Since many of you may still have hard boiled eggs left from Easter, I thought I’d share.
Take a dozen hard boiled eggs and cut them in half, popping the yolks into a bowl like you do for regular deviled eggs. Now add about a half cup of minced celery, about 8 ounces of finely chopped ham, a couple of chopped up green onions, a little black pepper, 3-4 tablespoons of Dijon mustard and a few tablespoons of mayo (how much will depend on your taste).
Mix it all together and stuff it back into the egg halves.
OMG yum. And if they taste that good with blah tasting store eggs, can you imagine what they will taste like with REAL eggs??

Actually deviled eggs don’t look half bad.
It’s normal for chickens to lay fewer eggs in the winter, because they have far less daylight. And while that is completely natural, I don’t have to like it. lol I’m really glad to have fresh eggs again. π
I didn’t know. Do fresh eggs really taste different from the store bought kind?
They really do. Once you start eating farm eggs, the store ones don’t even look appealing anymore. They are so pale and anemic looking compared to the bright orangy-yellow yolks of free range eggs. π You’d be amazed at the difference.
Wow! I don’t have any cholesterol problems so I can eat as many eggs as I want. Those Deviled eggs would be like a nice sandwich without the bread! The only thing I would add is a touch of your favorite paprika dusted on top. If I lived close enough, I would be getting my es from you for sure!
Ray, they those deviled eggs are amazing. I could have eaten half the plate in one sitting. π
