Candied Ginger Isn’t Just Candy

I just realized that I had some ginger root in the refrigerator. I had been having severe nausea for several days, so I bought it to make candied ginger. Of course, I forgot I bought it. Because that’s what I do.

If you’ve ever eaten candied ginger, you probably know it’s pretty yummy stuff. You may not know that it’s good for upset tummies, it fights inflammation (making it good for pain), and some think it can even fight certain types of cancer.

Eggstraordinary Amounts of Eggs

Wow do we have a ton of eggs! The chickens are finally laying again and, even though we lost a few over the winter, we are getting way more than we can eat. See all those eggs in the picture up top? That’s after Jeff took 2 or 3 dozen to work for people.

We also got a couple of coupons from one of our local grocery stores for free eggs. And I can’t turn down free.

Happy Spring! I know that spring started a few weeks ago, but I have been a little preoccupied lately.

We had our first bonfire of the year on Easter Sunday. I really love to watch a good bonfire. Those flames are like art to me and my husband, being awesome at building fires, is my favorite artist. The embers were so hot, they looked like an enormous pile of glowing rubies. So beautiful; it’s hard to keep from reaching out to touch them sometimes.

Busy, Busy, Busy!

Okay, so I am way behind on the A- Z Challenge. I don’t even know where we are at this point. All I know is things have been crazy busy here and I am having a hard time keeping up.

Jeff and I (mostly Jeff) cleaned and organized the barn so we can actually get a truck in there if we need to. That worked out really well since we got hail the other night. Perfect timing.
